Shredded Beef Barbacoa

- 5 lbs. of CMA Premium Hand Cut Diced Beef
- 2 Tbsp. of Minor's Chicken Base
- 1/4 cup of Minor's Ancho Concentrate
- 2 cups of Tomato, diced, canned with juice
- 1 tsp. of Cumin
- 1 cup of Water

Directions...
- 1) In a large roasting pan combine ingredients and place in a 350-degree conentional oven, covered for 3 - 3 1/2 hours (stirring occasionally).
- Cook until meat is tender and breaks apart easily.
- 2) Add water as needed to replace during evaporation.
- 3) Break beef apart using the back end of spoon until all is shredded.
- Combine with juices.
- 4) Place in holdin pan for service.
